Admin including receipting of all invoices, stock takes, month end reports, ordering supplies etc etc.
Maintain good relations with suppliers and neighbours.
Manage staff compliment of 9 - 3 cooks, 3 scullery, 3 waitresses.
Tutor possible student from reputable chef school.
Train staff.
Maintain health, cleanliness and hygiene standards.
Produce fresh, healthy, balanced menus.
Work well within a budget.
Staff discipline.
Willing to work long hours.
Lead by example, but not doing the cooks duties.

Official qualification and certified
Minimum 4 – 5 years experience.
Neat and presentable.
Previous lodge experience.
Previous isolated environment working conditions.
Strong guest communications ability.
Comp literate as job requires Admin.
Sober habits.
Independent.
Drivers License.
Own Transport, Lodge cannot be responsible for transport arrangements, except booking of staff flights should this be the preferred mode of travel.
